Food & Culture has been designed to be an all-around Italian experience. A perfect blend of Italian cuisine and enogastronomic culture, but also traditions, language, knowledge of our products, field trips and much more...The 7-day intensive course focuses on essential Italian food and wine subjects, such as extra virgin olive oil, pasta, traditional sauces, cheeses, cured meats, bread and pizza, food pairing wine, and introduction to the best-known Italian wines.So if you are thinking about a holiday in Italy, close your eyes, and let your dreams take you on the way to the enchanting medieval Abbey of SS. The Location

A remarkable part of the experience is its location, the 10th-century AD Abbey of Saints Quirico and Giulitta - a medieval gem hidden in the mountains nearby Rieti.The Abbey has six luxury bedrooms, a didactic room and a fully equipped professional kitchen other than being surrounded by a private forest with various picturesque and relaxing areas.

DAY 1

Arrival

Arrival at the Abbey of SS. Quirico and Giulitta, room check-ins and accommodation.Welcome dinner to get to know each other: classmates, chefs and owners.

DAY 2

Our Diet

First Lesson: The Mediterranean dietWe'll focus on flours and fresh pasta: from making the dough to processing techniques for the different types of pasta (i.e. fettuccine, tagliolini, lasagne). Lunch at the Abbey with the dishes prepared during the course. Wine pairing and tasting.Afternoon visit to the nearby city of Rieti, a small gem enclosed within medieval walls and crossed by a river of crystalline colors and dominated by the top of Mount Terminillo. Guided tour to discover its story, tales of unspoiled nature, and popular traditions.In the evening, gourmet dinner at the La Corte restaurant in Rieti with our food and wine excellence dishes.

DAY 3

Flours

Visit the Historic Mill of Micigliano, an ancient water mill made of local stone that is still active today, with its original iron and wood types of machinery necessary for processing corn, grains and selected flours. Aperitif at the mill, tasting typical products and returning to the Abbey for lunch.Second Lesson: Bread & PizzaAt a typical Italian pizzeria with a wood-burning oven, we will learn the art of bakery, using flours and yeast and techniques for making bread and pizza with traditional ingredients and condiments.We will discover together one of the most loved and well-known dishes abroad: Italian pizza. Dinner in the pizzeria where we will taste this delicious dish and the self-made pizzas made during the lesson.

DAY 4

Roman Cuisine

Third Lesson: Roman CuisineCuisine and dishes of the best Roman tradition ("coda alla vaccinara", tripe, chicken livers).
Wine pairing and tasting. Lunch at the Abbey with the products made during the lesson.
Fourth Lesson: Italian Wines.In the afternoon, visit the renowned winery "Le Macchie" in Rieti to better discover our wine production's excellence. We will closely observe the winemaking and ageing process, following all stages, from fermentation to bottling to conservation.Aperif-dinner at the Le Macchie winery, where we will taste typical local products and wines.

DAY 5

Rome

One day in Rome: we will leave the Abbey in the morning to give you a day to visit our capital independently.An authentic open-air museum like no other place in the world! Visit the most suggestive glimpses of the Eternal City.Lunch at a typical Roman trattoria with typical dishes of the most authentic Roman tradition.In the evening, return to Rieti and dinner at the Abbey.

DAY 6

Lake Turano

Fifth Lesson: Freshwater fishLet's discover together the typical freshwater products of our territory: Lake Turano. An enchanted place at the foot of one of the most beautiful nature reserves in central Italy. The clear waters surrounded by woods and two small and ancient inhabited centres give this place a natural fairy-tale air.The day includes (weather conditions allowing) a morning on the boat to collect the nets with the help of local fishermen searching for carp, pike and perch.The fish products will then be cleaned, prepared and processed by all the participants with the collaboration of the accommodation facilities of the Turano Valley.After returning to the Abbey, we will have a Gourmet aperitif with Molecular Cuisine techniques and techniques and spherification in oil baths, to also discover the new flavours of Italian food and wine. Dinner at the Abbey restaurant.

DAY 7

Amatrice

We will depart in the morning for the city of Amatrice (Rieti) to discover an area that, although heavily battered by the 2016 earthquake, it's rising from its ashes.Visit to the production and qualitative excellence of the Salumificio Sano di Amatrice of the Castelli family, the first Italian company for the production of guanciale and Prosciutto Amatriciano I.G.P. and typical regional specialities.Together we will appreciate the quality of the selected meats, the sensible salting and the constant care over the long term in which the products breathe the natural air of the Amatrician mountains, bringing the aromas and flavours of the good things of the past to the table every day.Lunch in the new food area of the city of Amatrice with typical dishes and the famous Amatriciana pasta!Return in the evening, dinner in the Abbey and the closing ceremony where we will distribute the participation certificates to the students.
